In Gomi, a village in Georgia nestled at an altitude of 2000 m, pear tree leaves are rolled like those of black tea following an age-old technique from the region of Guria. This is done to produce herbal tea in the style of true “tea”.

Prepare this herbal tea warm:
With the teapot or the tasting set: 5 minutes in water heated to 90°C / 195°F.
With the gong fu cha: infusions during 30-40 seconds.
Prepare this herbal tea iced:
In a teapot or a carafe: infuse 8 g of leaves per 50 cL of water at room temperature for 1 hour. Remove the leaves and store in the fridge.
