The ingredients
Buckwheat (Fagopyrum esculentum)
This polygonaceous plant is grown in harsh climates such as Brittany in France. Its seeds are eaten as they are, roasted or ground into flour to make galettes. Its notes of roasted hazelnut are particularly appreciated in pastries!
Rice (Oryza sativa)
A staple food in many cultures, rice comes in a thousand varieties, shapes and colors, from the south of France to Japan and Italy. Steamed, used as flour or even puffed, rice lends itself to every culinary exercise - and is delicious infused!
Cocoa (Theobroma cacao)
Cultivated for over 5,000 years in Latin America, cocoa only arrived in Europe in the 15th century. Aromatic and bitter, it is seductive when enhanced with sugar. Today, both cocoa and chocolate are gourmet must-haves, enjoyed in drinks or incorporated into pastries.

Prepare this infusion warm:
In a tasting set or teapot: immerse 8 g of infusion in 50 cl of water at 90°C for 5 minutes.
Prepare this infusion iced:
In a teapot or carafe: immerse 8 g of infusion in 50 cl of water at room temperature for 30 minutes. Filter and store in a cool place.
Prepare this infusion latte:
In a large mug: heat 30 cl of rice or cow milk, then immerse 8 g of infusion for 5 to 10 minutes, depending on the intensity chosen. Filter and froth.
