This Grand Cru is the fruit of the remarkable expertise of Mr. Shoji, an exceptional and passionate producer based in the Shizuoka region of Japan.
Sourced from the first harvest of spring, ichibancha in Japanese, and crafted from the famous Yabukita cultivar, this green tea reflects a processing of rare precision. The work on the leaves, finely rolled into regular needles, promises a tasting of immense finesse right from the first glance.
Upon infusion, the light green liquor reveals a wonderfully smooth texture on the palate, heightened by a subtle umami flavor. Its complex aromatic profile sways between the freshness of vegetal notes, the richness of tree nuts, a delicately vanilla nuance, and a finely toasted finish. A poetic and refined spring interlude.
How to prepare this hot tea:
In a teapot:
• Steep for 3 minutes in water at 70°C (175°F).
Or traditionally in a kyusu / shiboridashi.
How to prepare this cold tea:
Kooridashi preparation (ice steeping):
• Place 5 grams of tea into the kyusu or shiboridashi.
• Place ice cubes directly on top of the tea leaves.
• Pour out the liquor as soon as the ice cubes start to melt, or wait until they melt completely.
• Add more ice cubes and repeat the process until the flavors are exhausted.
