Rose Matcha Cookies

Rose matcha is as surprising as it is refined. In this cookie recipe, this Palais des Thés creation reveals a colorful and gourmet side. Some may even notice surprising notes of pistachio, created by the beautiful harmony of matcha, rose, and almond.

Ingredients

- 1 1/2 tbsp of Matcha Rose

- 1/2 cup of powdered sugar

- 3/4 stick of salted butter, softened

- 1 1/2 cups of all-purpose flour

- 1 tsp of baking powder

- 1 large egg

- 2 tsp of rose water

- 2/3 cup of pink pralines (crushed)

- Optional: dried rose petals for garnish

Preparation

    1| Set your oven to 320°F
    2| Sift the matcha, flour, powdered sugar, and baking powder together in a large bowl.
    3| Create a well in the center and add the egg, softened butter, and rose water. Mix in the crushed pink pralines and knead until a dough forms.
    4| Form 16 dough balls and place them on a baking sheet lined with parchment paper, leaving space between each.
    5| Decorate each cookie with dried rose petals or a few extra bits of crushed pralines.
    6| Bake for 15 minutes

Preparation Advice

You can replace the rose water with rose syrip; if so, reduce the powdered sugar to 1/3 cup.

For Matcha Lovers: To intensify the flavor, add 1 tbsp of plain matcha (such as Ichi, or Kokoro).
