Matcha Tiramisu

Light, comforting, exotic: here are just a few of the qualities of this matcha tiramisu, as simple to make as it is delicious to enjoy! A beautiful pale green dessert that will win over even the most reluctant when it comes to Japan's famous powdered green tea.


Ingredients
- Approx. 8 g matcha of your choice
- 3 eggs
- 65 g icing sugar
- 250 g mascarpone
- 10 ladyfingers
- 1 pinch of salt
Instructions
1| Prepare the matcha in the traditional way, slightly stronger than usual: 3 spatulas of matcha for 7 cl of water at 70°C.
2| Soak the ladyfingers in the matcha and lay them at the bottom of a dish.
3| Prepare the matcha cream: separate the egg whites from the yolks. Whip the egg whites with a pinch of salt until stiff. In a separate bowl, beat the egg yolks with 3 spatulas of sifted matcha and the icing sugar for 2 to 3 minutes, then fold in the mascarpone.
4| Gently fold the whipped egg whites into the mascarpone cream using a soft silicone spatula.
5| Pour the mixture over the ladyfingers.
6| Refrigerate for at least 4 hours, ideally overnight.
Tasting tip

For an even deeper umami flavour, dust a little sifted matcha powder over your tiramisu just before serving.
